We believe in the powerful simplicity of the taco as it was originally conceived and prepared all over Mexico, to this day. We believe that it is possible to be creative with new recipes while being respectful of Mexican cuisine at the same time.
This is our philosophy and our goal: to deliver the best authentic Mexican food here in the south.
The Food Truck
Catarina’s Food Truck is a mobile restaurant serving Mexican-inspired tacos, quesadilla and other dishes. It currently operates in Murfreesboro, TN. The name Catarina’s was derived from the Mexican icon of La Calavera Catrina. Catrina, as an icon, started as a criticism of upper-class Mexicans who were said to have abandoned their traditional Mexican roots in favor of aristocratic, European culture. These days however, Catrina has come to represent humor and an independent spirit, so closely tied to Mexican identity itself.
The brainchild of San Diego native, Juan Navarrete, Catarina’s Food Truck hopes to serve authentic Mexican food to this corner of the Volunteer State.
The Founder
Born and raised in San Diego, Juan Navarrete is a self-taught cook who worked for years at several restaurants and food chains in Southern California before deciding to open Catarina’s Food Truck. His family comes from various regions in Mexico, particularly in Sinaloa. For the past decade, he has also worked in various firms and advertising agencies. Food, travel and culture– these are the things that Juan invests his time on when he is not busy working on the food truck.
