Carnitas

I need to get this out of the way and I may be biased but I’ll say it anyway: I think that our carnitas taco is the best thing we have on our menu.

I’m no stranger to carnitas. My idea of comfort food is a carnitas burrito, doused with salsa verde, beans and rice. Take me to any Mexican place and I would order a humongous carnitas plate.

But here’s why I love, love, LOVE our carnitas taco: Of the tacos we make, it has the most interesting taste. We owe it to the preparation. It takes us a minimum of three (3) hours to finish cooking the carnitas meat to ensure that it’s soft and not at all dry. We also cook it with a variety of ingredients and serve it topped with pickled onions & salsa verde. The result is a complex interplay of flavors.

Our carnitas taco is a staple on our menu. We are rolling our truck back to the streets this March and we invite you guys to sample it, along with other things (new menu items!) we’re serving this spring.
